So I have a category with over 30 videos, is there a way to assigned metadata to them all at once rather than individual? They are short videos and I want them all to have the same metadata and cover art, but I notice I have to set them one by one in Plex.

While it allowed me to select all the media, there are no options to change the poster, banner, and background which is what I want to do.

You can use multi-selections in Plex. [HowTo] Selecting multiple items for edit, playlist, etc.
