Plex does offers a selection of colors to use, but missing the most important one: Grey.
Grey is the default sub color on pretty much all 4K HDR discs. Reason being that with HDR the brighter colors glow.
Which client type?
Because grey is available in some clients already.

HDR content and OLED TV’s is becoming more and more common, but it has a major flaw for those of us who need to use subtitles: brightness. White subtitles shines with the force of a thousand suns with HDR on OLED, and makes it quite uncomfortable to watch.
I request that we can configure the color of text based subtitles. Gray is adequate.
Hi. I’ve been using Plex for years now with my Chromecast, and recently I got an LG OLED TV and a Chromecast 4K HDR, both of which support HDR10+ and Dolby Vision. This means that, when playing HDR content, the brightest parts of the image can reach up to 600 nits (normal TVs usually reach 150-200 nits). This doesn’t mean that the whole image will appear brighter, only the highlights of the image reach those levels (and also there’s more color saturation and deeper blacks).
