The ‘default’ flag is not the right flag for these types of subtitles.
You need to set the ‘forced’ flag on the appropriate subtitle track.
This is currently only possible in MKV files or by using external subtitle files.

Yes, they do.
You change these options the same way like you change the avatar for managed users.
First, you “become” them by ‘switching user’

Then you can edit their avatar and language prefs.

If you have users in your Plex Home, which do have a full plex.tv account, you cannot do the settings for them. They must do it themselves here: https://plex.tv/users/edit

Name of movie file (year).eng.forced.srt
Name of movie file (year).eng.srt
Instead of eng, you can use any of the ISO 639-1
2-letter or ISO 639-2B 3-letter language codes
