This has been discussed in other forum categories (e.g. here, here, and here), I wanted to capture it in this category as a feature request as I would presonally like to use it.
Simply put the feature request is extend the {edition-xxx} functionality that currently exists in movie libraries to TV episodes. I understand Plex is considering this for a future release but I’m not sure its a committed feature and I don’t think there is a timeline.
There’s an existing request for this feature. Better to vote over there rather than duplicating it.
(They specifically state “TV Shows” in their request and your request mentions episodes. However, the example they provide is for an episode, so the spirit of the request is likely to support both.)
