It would be good to have the ability to set either server wide or user specific sync defaults.

I’d like to set it to No Limit, so when syncing from the web interface to Android, I don’t need to uncheck the box each time.

YES! This would be great. Whenever we have to re-configure which shows to sync, it would be great to have a pre-defined set of defaults.

Mine would be:
Unwatched only @ 2mbit (720) and keep only 10 at a time for each show.
