When I set a TV series up to sync to my devices, I always select "Unwatched meda only" and always choose to sync 3 episodes.
This should be in the sync settings preferences section along with the existing Sync Quality settings defaults.
If for any show I didn't want to accept this default setting, I would uncheck it the same as currently I have the existing option to change the sync quality.
