anybody have an idea of what might be causing this?
Having the same issue. I completely reinstalled CentOS and still no go so don’t bother with that. 
FYI - in case you missed this like I did before reinstalling
i was able to resolve the issue, a file changed in the latest update and doing an RPM -e plex then a reinstall using yum didnt fix the issue, i ended up having to manually delete all files associated with plex, then reinstall and restore the metadata for plex.
from the release notes in PLEX it looks like the latest update take care of this issue, i have yet try it out.
the root cause seems to be with how SELlinux works with plex.
