I’m living in Israel and it’s not in the supported country list, is the there way I can still use it?
manually and the EPG data or just use it as live tv?

You can add your own EPG using XMLTV data. https://support.plex.tv/articles/using-an-xmltv-guide/
On the screen where you select the country, pick anything. On the next page, you choose the option to use the XMLTV data.
