After updating to version 1.8.1.4139 on macOS Sierra v. 10.12.6 I’m unable to play any of the items in any of my Plex libraries. Any assistance or suggestions would be greatly appreciated. Server logs attached.

You’ve got database corruption. I’ve seen threads recently about it where there was database corruption prior to the upgrade, which was then made worse during the upgrade. I’ll try to find a few recent threads about it, but in the meantime you might want to search the forum for terms like database corruption from the last week or so, you should get a few good hits.
@sa2000, I recall you being involved in a few discussions. Any ideas/pointers?

The database corruption is quite old and goes back to August 14th and may even have been before that
So try a a repair - see https://support.plex.tv/hc/en-us/articles/201100678-Repair-a-Corrupt-Database
