Sorry for the stupid elementary question. I’ve been using Plex to stream movies to my TV from my laptop via fire stick for a few years now, but it was only last month I realized there were all these other movies available that weren’t from my server. Where are these actually from?

It is free, ad-supported content that streams from servers at Plex. Your personal Plex Media Server is not involved in the streaming. The media can be streamed without a Plex Media Server or even an account at plex.tv. Go to plex.tv and click on “Free Movies & TV.”
You can enable/disable in Online Media Sources settings.
