Been a very happy WDTV user for several years and decided to give Plex a run via my xboxone. The server runs off my Windows Home Server.
Media plays flawlessly from the WHS to the xbox so I am very happy about that, however:
1. It is not playing MKV - I understand it won't. Is this correct, Plex won't play MKV files to the xbox?
2. The media library view is atrocious. Every time I open the app it presents me with odd choices. Eg. Movies by Ian Mckellar. Now I like the guy but I sure as heck am not interested in being presented with this information. Frankly, I want my folder views like I have them on the WDTV but there seems to be no way to do it. It does give me a search by A-B-C etc but this is also useless to me. Am I missing something here? Am I not selecting right choices from the app or the server?

1) Currently, no the App does not play MKV directly, it remuxes to mpegts for the Xbox One. The MKV container was released to 3rd party apps but during testing a bug was discovered by the Plex team that needed a fix from Microsoft, and we haven't heard if that has been fixed/when we will see mkv native support.
2) You're not missing anything. The App is still in a preview stage (ie still a work in progress) so it is missing sort/filters which would help you navigate a larger library the way it sounds you are wanting.
In the meantime - I don't have the iOS app for Plex, can I use it to cast media to the xb1? This might be one way of avoiding the xb1 interface.
Sadly right now no. The Developers are looking into it, but as with all unreleased functions we don't really know the status/time line of Plex Companion(Term for casting) for the Xbox One.
Ok - so sit tight for the MKV and hope that the user interface steps up over the coming months.
Just want to point out, the UI itself won't be changing (The new look appears to be the goal for platform uniformity), but there will be additions to make it more functional and hopefully easier to navigate. Originally I had ~22 libraries separating things such Collections and while finding things was a lot faster it made the home screen cluttered. After pairing down to ~10 libraries it is more cumbersome to search some libraries, but accessing the main screen isn't just a wall of orange any more.
Thanks - apologies I have misled the converstaion : I am very happy with the UI, indeed it's great. It's the functionality that I was asking about.
What I have for example is movies > Bourne collection (sub folder) | batman (sub folder) etc. This is what I was hoping to see when I browsed. At present it's just one list of movies under browse - browse being the only way I can navigate my collection.
Having said that I am warming to it and making tweaks to the renaming of movies to ensure the browse library presents as I would like it to.
But - it's a pain having to navigate my home movies which are indexed by year > event. A real pain!

I'm right there with you. I had the same issue with a "wall of orange". I broke my library up over two servers so I only have one row on my main server that I use every day and still mostly a wall of orange on my secondary server which I don't care about as much.
I kind of wish we had a setting to keep all libs in one row on the left and they could "scroll off screen" keeping only 5/6 on screen at one time. Could be confusing to some people but if it were an option... Doubt this would happen however (never asked for it either).

Another option might be to make it similar to the other quick view items where you have a number of items (like 2 columns or so) with the ... for the rest of them. But who knows how it would be calculated or anything or even possible

That could work but I think the way the Samsung client does it would be best. It just scrolls from the bottom to the top or from the top to the bottom.
You can basically get an unlimited amount of items in one row that way.
So basically I keep paying to Plex and not get basic folder view working on Xbox - AND xbox needs plexpass. That is not just wrong, it is borderline illegal.

I really like plex, but this is not right.
You are paying for early access to a product that is not completed or released yet. If you don't want to pay while the features are being developed then the best thing to do is cancel your plex pass and wait until the blog announces the clients full release.
Pretty sure this is quite a false statement (and also absurd). The terms are quite clearly laid out that it's a preview and this is an added benefit of Plex Pass on top of Gracenote for music, sync, trailers, and more. Like said above, if this isn't for you, don't pay.
Vote with your wallet like you would anything else in life.
