Why wont my plex streams buffer more than 1 minute ahead not matter if its direct play/stream or transcoding?

As the title states my plex streams will never have a buffer more than around a 1 min ahead than what the video is playing at. No matter if the quality is 1080p 8mbps or 50mbps. I was wondering why this is the case also is there any way of changing it to add more buffer at the end when direct playing and for transcoding as well? Because for my computer the 1 minute buffer is fine since it has a more reliable connection to my internet but everything else could play really good for a while but then start buffering and I feel that if it pushed that one minute boundary that it could continuously play without stopping during the times that the WIFI drops the connection for a few seconds or even a minute.

For reference I have a 100mbps down internet line should playing the above files should be no problem and it inst as long its on my PC. Any idea if this setting can be changed or not? Thanks for reading.
