Does the Xbox one not have access to the channels part of the plex and only my media library?
Maybe I'm doing something wrong but I only get my movies and TV shows?

Xbox doesn't have Music, Pictures, or Channels yet. They are still in/yet to be developed, plex has said all 3 of these are planned to be added though. Check out the xbox one forum: https://forums.plex.tv/forum/148-plex-for-xbox-one/
