When I go into my account settings and look at managed library access, I have 6 plex servers shared with me. Yet, when I’m on my home screen… I’m only shown one of those servers… I used to be able to see all of them and pin folders from all of them to my home screen… or I could at least bring up the list of shared library, expand them and enter them… now I’m only shown one. If I remove the displayed library, it will then display another one of the libraries shared with me, but only one… what can’t I see them all anymore ?

No… and that’s the real problem… in the past thats exactly where they were. When Plex did their list big update, changed the layout, forced usernames on us… the ability to switch between shared servers went away for me.
Switching servers hasn’t been a thing for years.
You access libraries from the sidebar (pinned ones should be right there, unpinned ones are available via More).
There’s been no change to that and no issues related to adding user names etc.
Can you confirm those libraries are still shared with the account you’re using for that particular account of yours?
What client and version is this?
They could have shared with before then deselected/ untick libraries afterwards
