When I add a new episode(s) of a TV series the dashboard not only shows details of what’s happening with the new episode(s) being added but also shows that the metadata is being updated for existing programs already on the server, which means that the process of adding new episode(s) is taking longer than I’d expect.
Are there any settings that I should change to stop this happening?

In a word, No. Plex has always done this and probably always will.
Whenever you add new material, Plex will update the metadata for that entire show, to make sure it is actually up to date and it will also proceed to update metadata for shows that it thinks are missing updated metadata.
During maintenance, some shows may not complete the metadata update process due to maintenance hours being over or bad connections etc. and they will be included when you add new material.
While it can take longer than expected, you should allow it to continue regardless.
