After Update, AAC 5.1 now plays as "Stereo" instead of "Dolby Audio" on Vizio TV

I have been playing AAC 5.1 files on the Vizio TV as Dolby Audio 5.1 for weeks no problem. After the server update, all files now play as stereo. I have changed nothing on the TV and confirmed it’s still set as bitstream output.

How do I either get AAC to work as 5.1 and not stereo, or force Plex to transcode it to Dolby Audio as it was before?
