I currently use a ds212j, which is the hub of my home, but due to little processing power to use plex comfortably I am thinking of updating to one of the following:
DS716+II
DS216+II
DS216play
Does any one have any experience with any of these?

Keep you current NAS and buy an inexpensive PC that can handle transcoding easily. It won’t matter if the NAS isn’t powerfull. Headless, VNC in to manage it.
End of the day, NAS’ aren’t made for transcoding (with the exception of the play models, but the special chip isn’t compatible with Plex). Some high end models can handle it ok, but why spend so much money to artificially limit yourself to the Synology ecosystem. As Trumpy said, the DS716+II will be able to handle only ONE low end 1080p transcode at time, the other two can’t do any 1080p transcoding.
I have an NUC for my Plex Server. Also use it as my download station and some home automation/iot apps. Many of those apps could work on my NAS, but they would really make my CPU hurt.
Having an always on PC at home will open up so many possibilities, you won’t regret it.
