Using Apple TV Plex App version 2.1(12194) beta. Whenever an episode is deleted, the Plex app jumps back to the Apple TV menu, not to a Plex menu. Originally thought possibly user error, but the sequence has happened many times.
Steps taken, highlight episode, press and held the remote for 2-3 seconds until menu appears. Scroll down to ‘Delete’, press remote to delete, and taken back to Apple TV app menu.
