Does PlexConnect/ATV3 combo not do DTS or DD? Watching movies on my Mac Mini client my receiver will happily switch between DD or DTS. When playing the same movie via PlexConnect and an ATV3 the stream just stays as PLII.
Should have Google some before posting! Ok, so ATV3 doesn't do DTS but there a lot of threads about not getting DD5.1 even after turning the DD setting on the ATV3 to "on".

Q: My videos all play back in stereo:
A: Ensure you are running a recent version of the Plex media server (PMS) and ensure you enable "Dolby Digital during AirPlay" under the PMS advanced preferences.
Running PMS 0.9.7.17 - couldn't find that setting.
Not recent enough 
just realized that... now if I could only get optical from the ATV which just has decided to stop working.... oh joy.
