I have to libraries, one for films and the other for animes.
For the film library I have forced in the server and account configuration to force the romanian audio if available and if not use the standard audio ( i believe the first audio stream that is present in the file) with romanian subs. Works as expected.
For the anime library since there are usualy no romanian subs nor audio dubs the first audio stream is selected as the default audio stream. In this library a lot of my animes have multiple audio stream ■■■/eng/ita/etc. Is there a way to force the italian stream if available? I tried to edit the mkv atributes (force the italian audio stream as default and force) but there was no change. I might remember wrong but I do believe that in some point of time the PMS did take into account these attributes.
So, please help
No, unfortunately the automatic language selection in Plex only knows one preferred language.
For this to work, it’d need to allow the definition of several preferred languages (and a priority among them).
Setting several preferred languange for audio and subs might be a good ideea, i do think that I have requested this as a feature a few years ago but got rejected, not sure why. Anyway, a simpler solution would be also to have a language selection by library that overides the general one.
Is there something like this on the PMS roadmap?

Both have been requested before.
There is not a public roadmap per se.

On every episode I saw that i can force another language and the setting is persistent. is it written in the database, may i know where and maybe i’ll update the database myself?
I don’t have experience with directly manipulating the database.
Do also keep in mind that the stream selection is stored for every Plex user independently.
If you select a particular language, your managed users will still have the default on their accounts.
