hi all, new to Plex and I have a question. Am I best to run Plex on a pc that’s connected by HDMI to the TV or stream from the pc to a firestick?

Depends. 
If your PC is a quiet one, you are probably better off with the PC being both server and client (player).
This solution will play almost any file without transcoding (if you install PMP additionally to Plex server) in the highest quality available.
If your PC is rather clunky and loud, you rather want a small device on your tv that is the client.
This solution will require transcoding on the server much more often and won’t be able to do the finer things like bitstreamind surround audio or refresh rate-switching.
