Found the solution!!! Surprised that one of the Ninjas or a Dev never told us it’s an easy fix.
You will need to edit the music library, and in the “Advanced” section, scroll down to “Genres” and change the setting from the default Plex Music to Embedded Tags. You should also make sure that “Prefer Local Metadata” is also enabled.
Click “Save Changes,” and the library will be re-scanned with the new settings. When the scan completes, the Artist Genres will still be the same as before with the generic “Pop/Rock” etc. BUT, if you refresh the metadata for the library, now Plex will change the genres of your Artists to match the genres from all of the albums/tracks associated with that Artist. Takes a while for all of the new information to be applied, but worth the wait as far as I’m concerned. The Artists genres now make sense to me.
The artist page will only show two genres, but if you go to the edit page for artist, all of the associated genres from the albums will be shown there.
