when playing videos with chinese srts，subs display broken and playback stutters；if play with nplayer through smb or infuse with plex server，everything goes well
also，only stutter when there is subs，when no subs displayed everything goes well；and nothing wrong in my iPhone15pro @iOS18 beta3，just have issues with plex in iPad

Verify that your SRT files are using the “UTF-8 (with BOM)” text encoding.

I am having the same problem, its a problem with ios 18 beta and the plex app. If you use any language subs, it starts to stutter every time the subtitles is being displayed. You say it works fine on your iphone 15 pro, but I am having issues on the same device. The only workaround right now is downgrading back to ios 17 or using a plex client like Infuse.
I encountered the same situation, and it is likely related to the iOS 18 version on iPhones, probably a compatibility issue. When I used a device that wasn’t running iOS 18, the problem didn’t occur.
Verified with iOS18 beta, iPadOS18 beta and tvOS18 beta. All are having the same stuttering issue as well as squares instead of actual characters (UTF-8 encoding) right after upgrade. macOS Sequoia beta doesn’t have the stutter issue but still has the UTF-8 encoding display problem. Please check and help fix it before the OS 18 series hitting to official release in September.
