What do you mean with “Plex profile”?
If you mean different users, then yes you can use the Switch User action just like in all other Plex clients. This allows you to switch between different user accounts – as long as these are members of the same Plex Home.

Understood but can it support multiple unique Plex profiles, where each one is has it’s own history?
Each user in a Plex Home has their own settings and history.
Perhaps I haven’t asked the question correctly. When switching (apple) profiles on an Apple TV, will it remember which Plex user was signed in to that profile?
No. Plex doesn’t really consider different Apple TV profiles when picking a Plex account.
