I use a Mac Mini M2 pro and it has been working really well, what you should be researching is the Player Clients you are going to use.
Currently ATV Player, is not good, having said that, development of a new player which is in Beta is coming along very nicely. iPad New Player is also in Beta.
Expected later this year, New Mac Mini M4 and Apple TV. iPad pro M4 and iPad have been released recently
Forget about Smart TV players. There are other players worth considering. I will leave advice on those with other Plex subscribers
