Can you create you own "Optimized Version"?

I know you can “Optimize” items in your collection through Plex. I’m wondering if a user can create their own “Optimized” versions, and then either tell Plex where they’re located or put them in the same item folder with a naming structure like" moviename.mkv-optimized" or something like that.

Basically, I’d like to create my own Optimized versions using encoding software and settings more to my liking, but I don’t know if it’s possible to use the versions I create with Plex.

Yes; Plex supports adding multiple (quality) versions of the same movie into your library.
