I’ve just reset my computer and reinstalled my Plex Media Server but when I select the correct folders, it creats a whole new server without all my playlists, preferences and already seen movies. Now it shows my old server as unreachable.
How do I fuse the two servers and get back all the time I invested in playlists, etc.

Chances are that doing so has emptied your previous Plex data folder. This is the place where your Plex library lives. It is not uploaded to a cloud server or into your account on plex.tv.
Unless you can restore the previous plex data folder from a backup copy, I’m afraid it is lost.
If the plex data folder is indeed still there, you can try your luck with restoring a copy of the main plex database file. The main database file is often corrupted if the server is not shut down cleanly or the storage volume runs out of space.
