I recently reset my laptop. I used to run a plex media server on my computer: Raphaël
,1.25.6.5577-c8bd13540.
I reinstalled plex and plex media server.
Issue is : my server is gone when I log in with the same id and password on my account on plex and launch plex media server. It created a new one : 1.43.3.2951-1d73e3f3.
How do I get my old server back with all the data on it ?

By doing so you have erased your server data. They live on the hard drive of your computer and are not stored in some kind of “cloud”.
The second version number you cited is not from the Plex server software. Are you sure that you downloaded and installed the “Plex Media Server” software, and not just “Plex for Windows” (which is merely a player app)?
Above most likely means you have a new user => a new server, since all settings are stored in the registry
As such, your old server is gone
