Is it possible to add some server settings to let you choose if you want to watch your media with DV or HDR?
On my TV its always using DV instead of HDR which causes a few problems.
Would be nice to have this kind of setting inside the app or on the server settings.

Is this about a use case where you have multiple versions of the same movie and want Plex to default to the HDR version instead of the DV one in order to avoid Plex transcoding the media?
Not exactly.
For example I have a movie which contains DV&HDR info in one file.
Usually it takes the DV info with HDR fallback if the end usesers device does not support DV.
In my case the fallback to HDR does not get triggered because my Sony X95L supports Dolby Vision.
But sadly my TV has a DV issue which lays a “greyish” color over the full screen. The only way this movie would work correctly is when watching it in HDR.
Thats why it would be nice to have an option hidden under settings whre I can choose I want to watch my stuff in HDR instead of DV.
But you want like to use DV with other apps?
