I ve got the same issue - particular movies on chromecast ultra is stuttering but the same movies on shield plays flawlessly. Anyone find a solution for that?

Nope, no fix yet as far as I know unfortunately. I doubt the issue will be fixed to be honest. I think Chromecast is pretty much abandonware as far as Google / Plex is concerned.
