I’m sure it’s just a setting but I haven’t been able to figure out how to add Collections to my tabs. I have Recommended, Library, and Categories but no collections.
Plex client & version?
The Collections tab should appear. You do not have to enable/add it.
It is visible in Plex Web 4.142.2 via https://app.plex.tv/desktop/.
It is also visible on my Fire Stick 4K Max Gen 2 running Plex Android TV client 10.24.1.2313.
It shows up in the same version of Plex Desktop on Windows.
Maybe Mac specific? I don’t have a way to test on a Mac.

If you just now created your first ever collection in this library, it may take a while until this fact is made known to clients.
Let pass at least one nightly server maintenance cycle.
You could also try and shut down+reload the client in question. Sometimes a “Switch User” back and forth will trigger the update.
