I’ve been searching on the forum here without success, If there is a way to see all movies you have ever seen. I know that you can filter watched movies/shows but that will only show the ones currently in you server.
I keep on my server only good movies/show that I am sure I will watch again at some point and the rest after seeing them I delete them from the server. So with this I mind I would like be able to keep track (have a list) of all the movie/shows I’ve ever seen and my rating, even if I don’t have them anymore on my server.
If You watch a lot of stuff you will forget at some point a part of the movies/shows you have seen and If a friend recommends me something I would like to able check if I saw it and how a liked it.
Currently I am tracking this on IMDb, by rating stuff after I see it, but it would be nice to have it all in one place.
There is, but only partially.
You can see a list of “played” items, but the “rating” is not among the informations that get stored.
With Plex Pass you can see the full list in the Dashboard, under ‘Full History’.
Without Plex Pass that “played” information itself is not readily available. You’d have to export the relevant table from the primary Plex database file.

I’ve looked at the full history and it seems to only contain watched TV shows (i.e. no movies - deleted or otherwise). Also, I’ve been using Plex since the beginning (and a Plex Pass user) but it only goes back to April 2018 (for me), whereas my Plex use is much older than that… not sure why the Database was truncated.
ok, so here’s how I did it. it’ll work for you too. there may be a better way.
Within the web client: go to your Movies library. Now, go to the ‘Recommended’ tab. Scroll until you see ‘Recently Played Movies’ and click that text link. There it is. I also turned it into a smartlist that I could find more easily.
As for your play history only going back to 2018.
tl;dr - thats when they first started tracking that bit of info.
It was about a year after that when Plex started giving us some of the analytics based on that info. And at that time, some folks were (rightly?) alarmed that their history seemed to go back a year before the feature even launched.
