Can someone please explain exactly what I need to do to get subtitles the way I want them? If I’m watching a show in English that has foreign speaking parts - Spanish, for example - how do I get subs for those parts only? I have so far only managed to get subtitles for everything spoken or just English.

You want what are called “forced” subtitles. These subtitle tracks, when marked properly so Plex can see them and knows they are forced subs, will play with the audio track of the same language if you have your Plex account preferences set to choose subtitles automatically.
