Thanks - managed to get a clip from another user - on this forum topic Help! Plex Transcoder Exited due to an error - possible RAM issue? and i have reproduced the error

It is now with the development team.
It appears that the crash does not occur when selecting AC3 audio stream instead of TrueHD - that was the case for the clip we got from the other user

This appears to be the same issue that I pointed you to earlier. All videos with TrueHD will fail transcoding, whether 4K or standard Blu ray. Seems to be caused by a memory leak. https://forums.plex.tv/t/optimizing-4k-titles-causes-plex-to-freeze-truehd-audio-the-problem/238970/17
