I have an i3 7000 sieres CPU in the plex server.
I cannot remember which one. But it was a cheapy.
When transcoding 7 gig plus files to watch out and about the CPU cannot to it.
I found this out when I sync at home to my mobile and it was doing it at around x0.4 speed.
What CPU shoukd I get so it can transcode 10 to 70gig files at atleast x1.0 speed
WILDLY underestimated, IMO, but my opinion is neither needed, nor wanted.

Check if enabling hardware accelerated transcoding works for you with the given CPU. This should be a „Kaby Lake“ generation CPU with a good enough iGPU.
If you want (need) to go with a new processor instead, check out the PassMark scores mentioned in the article linked by JuiceWSA… the numbers in his post are slightly off when it comes to transcoding 4K files (by approx. 10000 points)
