Custom iOS profiles (xml files)

I’m fairly new to Plex.
I have my media files on a Synology NAS DS218+ with PMS running on an 8th generation i7 Intel Nuc. Both devices are connected to the same 1Gbit Switch, which is then connected to a router with a built-in wireless access point. 97% of my video files (movies, shows) are in HEVC, just to give you a little background. I have a mix of devices in the house, but what I want to focus on in this post are my iOS devices. I found from looking in the logs, that it appears that all iOS devices made after 2014 are treated the same, all hitting the iOS.xml (profile). The problem is this catch-all doesn’t work well for HEVC files. The iPhones (7Plus, X), directly play HEVC videos fine for the most part as long as the New experimental player is activated. My iPad’s are a hit or miss. One iPad is an iPad 4,5 (mini retina), the other is a 2018 iPad Pro. The iPad mini is a little too old to be running the experimental player, most videos have a very choppy playback, the iPad Pro with the new player activated sometimes plays videos with no sound. The strange thing is 4K videos normally direct play fine on the newer iOS devices, as long as it’s a straight UHD rip wrapped in an *.mkv file. Those super compressed 4K movies that around 14GB can be problematic. The point I’m trying to make is on my iPads 1080p HEVC movies need some kind of transcoding. I’m trying to create a custom xml profile for them, but I can’t find much online to help me do that. Most people seem to be more concerned with direct play. I’m looking for an xml that says iPads trying to play 1080p HEVC files transcode both video and audio, regardless if the audio is AAC or not.
