I am in the same situation. I really need this feature. It looks very easy to implement, I don’t understand why it is not available already.
Emby can disable transcoding per user for long time now.

We STILL don’t have this feature lol.
Same situation here. Before we were able to disable transcoding entirely, I had to delete pretty much all my users due to this. Ill prioritize close family and with the lack of serverside controls, I found no other way.
You would think Plex would want serverowners to expose the software to as many users as possible. In its current state, its like Fightclub.
Emby has this feature. Why not Plex???
