Edit and Demux ts file from Plex DVR into MKV or MP4 file

I have read a few similar posts here in this forum but havent seen any precise answers.

I am in Europe (France), and on a Mac (Mac OS X 10.14 Mojave)
I record live TV with Plex (I transitioned from EyeTV).
TV (OTA) in France is HD in H264. So the .ts file that I get is already in MPEG-4 which is great.
I appreciate that Plex record all audio tracks (Original in English and French track) as well as of subtitles (usually French) and allow me to switch from one track to the other or select subtitles or not.

What I would like is a way (on Mac OS X) to convert this .ts file (or DEMUX it ? - without having to convert it into another format) into .mkv or .mp4 while keeping all the audio tracks and all the SOFT subtitles. I tried MKVToolNix (v28.x) but got recurrent problems with the audio tracks and subtitles.

Also, My recordings are always starting a bit earlier, and finishing about 15-30 mn after en end of the movie. I would like to TRIM the parts I don’t want (including commercials) pretty much the way EyeTV does, while keeping the original .ts format. IS there a way to do that as well (on a Mac)?

Take a look at Avidemux—It works very well for editing out commercials and such.
