Although the current interface works, I would love to see a better organization and grouping of files.
That’s not very helpful. What specifically would you like to see? And which app are you referring to?
Animating covers and organization based on movie selected.
Still not very helpful. You might want to read this to see how to put in a good feature request:

Although the OP didn’t provide a clear articulation of what they had in mind, I too would like to see the browse all interface improved to smartly use more of the screen’s real estate. The Kaleidescape UX does a spectacular job of utilizing all screen real estate in both poster and list mode. Even cooler, they automatically provide new selections in poster mode based on your current selection.
For a brief highlight of the poster-mode browsing experience take a look at this youtube video from 1:55 to 2:10. See how all of the screen is utilized/full of movie posters? See how they dynamically adjust the posters visible based on your current selection? Awesome…
I LOVE PLEX. LOVE. But, when you have hundreds or thousands of movies, browsing them in the plex interface is under optimized. So much of the screen real estate is unused. Transitioning to an experience like Kaleidescape’s would make plex that much better.
Thanks for all you do!!!
If this is the poster mode you mean:

then it’s not much different from Nebula skin on Kodi with PlexKodiConnect and, honestly, I hate it
Have a look at Kodi+PKC though you might find already the GUI you’re looking for
