Also looking for this feature. Definitely annoying having people constantly complain about the quality when its just the dang default setting in their client! It seems it would be more practical to be able to set this server side as an override for the clients that have the default setting.

It is totally annoying. With these default settings, even 720p content gets transcoded (higher bitrate). [plex-remote-streaming-sd-annoying]
