I have a personal library and my buddy created an account so I could “Friend” him and share my library. He has watched several things, but they did not show up in the activity section. I walked him through enabling me to see his activity, but it is only displaying a series he watched free on Plex over a month ago. Is something else supposed to be enabled or disabled in order to see his activity?
they have to enable “Sync Watch State & Ratings” in account settings. So the data from your server is sent to plex.tv which can then be displayed in app there.

To be clear if you only want to see what was watched on server you can always as a server admin view the “play history” in the web app contextual menu for an item or on the dashboard.
There are also Privacy settings, where they have to set Watch History to be accessible by (at least) their friends.
Each Plex user account has their own settings.
Tell them to go here https://app.plex.tv/desktop/#!/settings/account
then Edit “Account Visibility and Activity Sharing”
