Looks like what was kinda tracked down over here: 4k files not working plex client for mac
Looks like something changed with GPU setup in native Plex app on Mac. I don’t have a dedicated GPU so can’t select another option but, like you, my files playback fine in Plex Web in Browser (via self-hosted or app.plex) and VLC\Quicktime playback.
