I have a plex server on DS218+ NAS whit a some managed users configured.
I have low space on NAS and I need delete files watched from all users!
Is it possible (through plugins or external tools) know if a movie or serie have been watched from all users so you can delete it from disk?

I cannot speak for any plugins or external tools.
You should however be able to see the play history of your media. If you access it from a movie / episode’s details page (... > View play history), this will show you who of your users already watched an item. Through the dashboard you can access the full play history and filter according to your liking.
