This Saturday, Plex would not open for me on xboxone. We were using it the night before. Ive unplugged the xbox, delete the app and reinstalled…its still not working. Any ideas?

The right sequence for this troubleshooting would be. Uninstall the app (hit uninstall ALL in manage games&apps, so also your saved data gets deleted), then hard reboot your xbox, and then reinstall the app.
Can you open other apps, because if the app really does not open this might not be a PLEX problem.
If the app really cannot start after this I would suggest a factory reset of your console (but this should be the very last resort)
