This Folder.png is located in PlexConnect's directory tree: assets/thumbnails/... When changing it you will replacing EVERY folder icon with your new picture.

Poster.png is originating from iOS, stored somewhere in in aTV. No chance to change it, unless you are having an aTV 2, jailbroken. But to be honest, I have no idea, why this is even called out there... :-)
