Does anybody actually like it? I hate having to scroll horizontally through episodes. I assume there’s no way to disable it?

FWIW I don’t like it either.
It’s tolerable on a TV UI when I am scrolling through a 10 ep TV season, but that is the best I can say about it.

that’s really the worst way you could design the episode view… on the old app layout I can see a maximum of 8 episodes while scrolling and in the new app I can’t even see 2 whole thumbnails

Completely agree. Netflix, Prime Video, Disney Plus, and Emby have understood this well and have continued to maintain the vertical view on every platform. Love it ! 
I don’t understand why Plex keeps insisting on this direction

I stopped using Plex on my TV because of the horizontal view. The app still kept the vertical view on the iOS and Android apps, but with this new app, it’s over. Trust me, listen to your customer feedback.
