How do i rollback the version of plex running on headless linux server

Can anyone point me to a way to rollback the version of the server currently in use without having to uninstall it. I have the 1.16.3 but its very unreliable it crashes it buffers and im thinking i need to roll it back. But as its a headless command line on linux how do you roll it back to an earlier version, is there an uninstaller for the latest package i can use?

Just install the package for the version you wish to rollback to. It will overwrite the current installation.
