Does anyone know if this is possible? Reason is that I have a particular show that only one episode is unsuitable for younger audiences. Every other episode if fine; so I want to have the blanket TV-14 rating for the show, but TV-MA for a single episode.

Isn’t that the rating that is referencing how well liked the episode was? I’m talking about content rating: TV-14, TV-MA, PG-13, R, etc.
i am not sure if you can change on TV series but there is a post here https://forums.plex.tv/discussion/205627/change-multiple-items-content-rating i see content rating being able to change on movies
For example, here is the content rating for an entire series. I would like to change the content rating for a specific episode, but as you can see from your image you posted, there isn’t an option. I’m wondering if I am not looking in the right place or if it is impossible to do what I want.

Right. I knew about being able to change movies and content ratings at a series level. Thanks for the link.
you might be able to restrict that by making a tag but i am not sure how 
Age classification is only supported at the top level in tv shows.
You cannot have different classifications on every episode.
