How to completely uninstall Plex Server

I have been having a bit of trouble with my Plex server and I wanted to completely reinstall the Plex Server, I try to delete everything I can, registry, files. But every time I run the installation Plex is still detecting the previous server even after I uninstalled everything. I don’t want it to do this I want to create a new server. Is there a way to get around this?

Sorry, I’m not sure if this made any sense but I would appreciate the help.
