Where is the setting?
PLEX does not automatically install updates. It does automatically downloads updates and asks you if you want to install them. The download setting is in Settings-Server-General --Automatically download updates
Is this what you are referring to?
You can always avoid the Beta software by changing the update channel at bottom of same page from Plex pass to Public. Show advanced is required.
